Our story begins with family recipes passed down through generations, rooted in the kitchens of our Fijian ancestors. As children, we gathered around the table to share meals infused with the bold flavors of Indian spices, the richness of Fijian ingredients, and the warmth of family traditions.

Founded by Anand, Krishan, and Raajan Kumar in 2019, Tolu is more than just a food truck—it’s a celebration of our roots, the journey of our ancestors, and the rich, cultural blend that defines Indo-Fijian cuisine.
The name "Tolu," meaning "three" in Fijian, represents both our bond as brothers and the fusion of three distinct culinary influences: Fijian, Indian, and Pacific Northwest.
In 2019, we set out to bring these family recipes to life in a new way, with Tolu Modern Fijian Cuisine. Originally operating from a commissary kitchen, our dream took shape as we began serving our signature dishes at local events. However, the pandemic forced us to take a brief break. It was during this time that we realized how much we missed sharing our food with the community.
So in September 2024, we made our comeback with a food truck, rolling through the streets of the Pacific Northwest and bringing the comforting, flavorful dishes of Fiji to a whole new audience.
From local farmers markets and breweries to private events and festivals, we are committed to honoring our roots while embracing the fresh, seasonal ingredients that the Pacific Northwest offers. Whether it’s a savory curry, fragrant dhal, or comforting poori, each dish is crafted with the love and care that has been passed down through our family for generations.
